This is the standard variety of ginger grown in Hawaii. Conventional farmers prefer white ginger because of its high yields. Also known as Chinese White, this ginger has a white to cream colored interior with a blue ring on older rhizomes. It has a peppery ginger flavor and it not as pungent as Hawaiian Yellow. This variety can take longer to sprout than our other selections and is a bit more finicky.
