Red Galangal, also known as lesser galangal, is an exotic variety native to China, and has found use all over Asia. The foliage looks very similar to it's big white cousin but it does not grow as tall. The rhizomes have an orange yellow flesh with and a nice red exterior.
You can expect a more aromatic odor and pungent flavor with this variety, although rhizomes will be slightly smaller in girth than the white Galangal.
Must be planted immediately. Galangal is perennial and does not form a thick cuticle (skin) like ginger. So does not store as long as ginger. Roots are very strong...the vegetable equivalent to steel cable.
