Galangal, also known as Thai ginger (or Ka in the Thai language), is an exotic variety native to South Asia and Indonesia, and is commonly cultivated in Malaysia, Laos, and Thailand. Foliage is 6-9 feet in height.
Young galangal is preferred for most culinary preparations as the completely mature root is very tough. It is very hot raw and smells pine-like in the best of ways. Upon cooking most of the heat dissipates, leaving you with the wonderful perfume and a little heat. Absolutely necessary for the Thai favorites Tom Yum and Tom Ka soup.
Must be planted immediately. Galangal is perenial and does not form a thick cuticle (skin) like ginger. So does not store as long as ginger. Roots are very strong...the vegetable equivalent to steel cable.
