            About Ginger


                  Ginger is the worlds most widely cultivated spice. There are hundreds of edible gingers on earth. Perhaps there are fifty varities in Africa and India alone. However only two dominate the world market as far as food and medicine. Over 99 % of all ginger grown for the world market are varients of Chinese White Ginger. The rest is Japanese Yellow Ginger. FYI at this juncture I point out that Chinese white ginger grown in Hawaii becomes Hawaiian White Ginger and Japanese yellow ginger grown in Hawaii becomes Hawaiian Yellow Ginger. Listen friends. Both kinds of gingers are good for you and are loaded with hundreds of healthful and healing compounds. The two most well known and studied are gingerols and curcumins. While we may focus on these two, it is the synergetic affect of all these compounds that create the medicinal benifits ginger is so well known for. Our white gingers test extremely high in gingerols, our yellow ginger has the greatest concentrations of curcumins of all the gingers. Curcumins are being studied worldwide for brain health and potential prevention of alzheimers. Curcumins are also found in abundance in turmeric. Delicous spice and healing food too, no wonder ginger is often referred to as the universal medicine.



                 Biker Dude of Puna Organics has been growing organic ginger for export longer than any other grower in the world.
            Our specialty has always been yellow ginger. However we grow a significant amount of white ginger too. Our Big Kahuna is the strain of white ginger studied for a decade by the University of Hawaii. It is the work horse of Hawaii and along with Da Kine Ruhi, tests highest in gingerols of all the Hawaiian gingers. Our Da Kine Ruhi is a rare strain of white ginger. The unusual feature that distinguishes Da Kine Ruhi from all other white ginger is its bright yellow flesh at the tips. This indicates a concentration of curcumins not seen in any other white gingers. Both Da Kine Ruhi and the Big Kahuna have the tradional bluish flesh at the base found in superior white gingers through out the world. This blueness in the ginger often results in the ginger being referred to as the blue ring ginger. The blue gradually fades to a creamy white color further up in the hand (a hand is the whole piece of ginger). These blue ring white gingers (Kahuna and Ruhi amongst others) are not to be confused with the true blue ginger Baba Blue. We are the only ginger farmers in the world that grow Baba Blue Ginger for export.
            Conventionally grown ginger is subject to many chemical contaminates, some of which are systemic. No matter what kind of ginger you decide to use it is most important to always CHOOSE ORGANIC!
